8 oz cream cheese (softened) 1/2 cup mashed sweet potato
1 cup powered sugar 1/4 tsp cinnamon
3/4 cup chopped pecans 2/3 cup sweetened coconut

 

In a small mixing bowl, beat cream cheese, powdered sugar and sweet potatoes until smooth. Shape in log; roll in pecans and /or coconut. Cover and refrigerate until serving. Serve with graham cracker sticks.

1 cup vegetable oil 2 cups sugar
4 eggs 1/4 cup hot water
1 1/2 cups shredded sweet potato 1 tsp vanilla
1 1/2 cups self rising flour 1 cup chopped walnuts
1 tsp cinnamon  

In a mixing bowl, beat oil and sugar. Add eggs one at a time, beating well. Add sweet potato, water and vanilla. Mix well. Combine flour and cinnamon; add to potato mixture. Stir in walnuts. Pour into 3 baking pans and bake for 25 - 30 minutes at 350 degrees.

Cream Cheese Frosting:

8 oz cream cheese 1 stick margarine
1 box powdered sugar 1 tsp vanilla
 1 cup nuts (optional)  

Cream margarine and cheese. Add sugar and nuts. Spread on cool layers.

1 Yellow Cake Mix 1 1/2 Baked Sweet Potato
1/2 cup Milk 1/3 cup Vegetable Oil
4 Eggs 1 1/2 tsp Cinnamon
1/4 tsp Nugmeg 8 oz Cream Cheese
1 cup Confectioner Sugar 16 oz Whipped Topping
1/3 cup Chopped Pecans, Toasted 1/4 cup Caramel

 

 

In a mixing bowl, combine cake mix, 1 cup sweet potato, milk, oil, eggs, 1 tsp cinnamon, and 1/4 tsp nutmeg on lowspeed for 30 seconds. Beat on medium for 2 minutes. Pour into 4 greased and floured 9 inch round baking pans. Bake at 350 degrees for 25-30 minutes. Cool 10 minutes before removing pans to wire racks. Cool completely. Beat cream cheese, sugar and remaining sweet potato and cinnamon until smooth. Fold in whipped topping. Place a layer on a plate, spread with 1/4 of the filling. Repeat layers 3 times. Top with caramel topping and pecans. Chill.

2 cups Sweet Potatoes 1 1/4 cup Sugar
1 Stick Margarine 1 Egg, Beaten
1/4 cup Milk 1 tsp Vanilla

 

Boil sweet potatoes. Peel. Put in large bowl and beat well. Add margarine, sugar, egg, milk and vanilla. Pour into unbaked pie shell. Bake at 350 degrees for 30 - 35 minutes or until crust is golden brown.

1 Graham Cracker Crust  1 8oz Whipped Topping
1 4 ox pkg Cream Cheese  1 Cup Powdered Sugar
1 cup Mashed Sweet Potoato 1/2 tsp Ground Cinnamon
1 tsp Vanilla Chopped Pecans

In a mixing bowl, combine cream cheese, 1 cup whipped topping and powdered sugar. Mix until smooth. Add vanilla, sweet potatoes and cinnamon. Mix until smooth. Pour into pie shell. Top with topping and garnish with pecans.
