Sweet Potato Log

| 8 oz cream cheese (softened) |
1/2 cup mashed sweet potato |
| 1 cup powered sugar |
1/4 tsp cinnamon |
| 3/4 cup chopped pecans |
2/3 cup sweetened coconut |
In a small mixing bowl, beat cream cheese, powdered sugar and sweet potatoes until smooth. Shape in log; roll in pecans and /or coconut. Cover and refrigerate until serving. Serve with graham cracker sticks.

Sweet Potato Cake

| 1 cup vegetable oil |
2 cups sugar |
| 4 eggs |
1/4 cup hot water |
| 1 1/2 cups shredded sweet potato |
1 tsp vanilla |
| 1 1/2 cups self rising flour |
1 cup chopped walnuts |
| 1 tsp cinnamon |

In a mixing bowl, beat oil and sugar. Add eggs one at a time, beating well. Add sweet potato, water and vanilla. Mix well. Combine flour and cinnamon; add to potato mixture. Stir in walnuts. Pour into 3 baking pans and bake for 25 - 30 minutes at 350 degrees.
Cream Cheese Frosting:
| 8 oz cream cheese |
1 stick margarine |
| 1 box powdered sugar |
1 tsp vanilla |
| 1 cup nuts (optional) |

Cream margarine and cheese. Add sugar and nuts. Spread on cool layers.

Sweet Potato Torte

| 1 Yellow Cake Mix |
1 1/2 Baked Sweet Potato |
| 1/2 cup Milk |
1/3 cup Vegetable Oil |
| 4 Eggs |
1 1/2 tsp Cinnamon |
| 1/4 tsp Nugmeg |
8 oz Cream Cheese |
| 1 cup Confectioner Sugar |
16 oz Whipped Topping |
| 1/3 cup Chopped Pecans, Toasted |
1/4 cup Caramel |
In a mixing bowl, combine cake mix, 1 cup sweet potato, milk, oil, eggs, 1 tsp cinnamon, and 1/4 tsp nutmeg on lowspeed for 30 seconds. Beat on medium for 2 minutes. Pour into 4 greased and floured 9 inch round baking pans. Bake at 350 degrees for 25-30 minutes. Cool 10 minutes before removing pans to wire racks. Cool completely. Beat cream cheese, sugar and remaining sweet potato and cinnamon until smooth. Fold in whipped topping. Place a layer on a plate, spread with 1/4 of the filling. Repeat layers 3 times. Top with caramel topping and pecans. Chill.

Sweet Potato Pie

| 2 cups Sweet Potatoes |
1 1/4 cup Sugar |
| 1 Stick Margarine |
1 Egg, Beaten |
| 1/4 cup Milk |
1 tsp Vanilla |
Boil sweet potatoes. Peel. Put in large bowl and beat well. Add margarine, sugar, egg, milk and vanilla. Pour into unbaked pie shell. Bake at 350 degrees for 30 - 35 minutes or until crust is golden brown.

Sweet Potato Dream Pie

| 1 Graham Cracker Crust |
1 8oz Whipped Topping |
| 1 4 ox pkg Cream Cheese |
1 Cup Powdered Sugar |
| 1 cup Mashed Sweet Potoato |
1/2 tsp Ground Cinnamon |
| 1 tsp Vanilla |
Chopped Pecans |
In a mixing bowl, combine cream cheese, 1 cup whipped topping and powdered sugar. Mix until smooth. Add vanilla, sweet potatoes and cinnamon. Mix until smooth. Pour into pie shell. Top with topping and garnish with pecans.
